3 Easy Breakfast Ideas

For most of us, mornings can be a hectic time trying to get yourself and your family out the door! It can be difficult to prioritize having a complete breakfast, so to help with that, here are 3 breakfast ideas that you can make ahead of time to minimize the stress of fueling yourself for the day. When putting together breakfast, we want to make sure to include a carbohydrate, protein, fat, and a fruit or veggie for fiber. The carbohydrate will provide you with the initial energy or gas in your tank to start your day and the fat and protein will help sustain you until your next meal or snack!

Pumpkin Chocolate Muffins

This recipe is always a crowd pleaser! You can make a batch on the weekend and incorporate them as a snack or into your breakfast throughout the week. To complete the meal, pair it with a yogurt parfait with yogurt as your protein, almonds or chia seeds as your dietary fat, and your favorite berries as your fiber source.

Overnight Oats

Ingredients:

  • 1/2 cup oats

  • 1/2 cup milk of choice

  • 1/4 cup yogurt

  • Drizzle of honey

  • 1 tsp vanilla extract

Combine all ingredients in a mason jar or Tupperware container and refrigerate overnight. In the morning, add any toppings you want! I like to add chia seeds and sliced almonds for dietary fats and an added crunch and bananas and strawberries.

Breakfast Burrito

Ingredients:

  • 12 eggs

  • 6 large flour tortillas

  • ¼ pound sausage or bacon

  • Shredded cheddar cheese

Instructions:

  1. Brown sausage or cook bacon and set aside.

  2. Scramble eggs and set aside.

  3. Layer the eggs, sausage/bacon, and cheddar cheese in each tortilla. Wrap to form a burrito.

  4. Place all the burritos on a baking sheet and place in freezer for 1 hour. Move the burritos to a freezer safe bag or container and freeze.

  5. To defrost, remove a burrito from the bag, wrap it with a damp paper towel, and heat it in the microwave for 2 minutes.

These are great to make ahead and can keep in the freezer for 3 months!
